Highly prized for the quality of their intense marbling and flavorful fat cap, this mangalitsa cut highlights the best of the breed. Cured under bay leaf, rosemary, and juniper berries, it's prime to slice thinly and ribbon over crostini still hot from the toaster (look for the heat to begin rendering the lardo into the crusty bread). Top pizza for next-level pies. Whip room-temperature strips with fresh herbs and spoon over roasted potatoes and grilled veg.
