Introducing Lindsay

Her work days were filled with English grammar lessons and corralling kiddos, but her days off were filled by the pages of Osterie & Locande d'Italia, Slow Food's guide to traditional restaurants all over the boot. Lindsay set out from her job in Torino to discover Italy's bubbling craft beer scene and the unique dishes of each region including the carne crudo that became a favorite dish of this ex-vegetarian.

After a year, she was back in Indy and working with nonprofits on energy efficiency and health care issues at the Statehouse. As her work transitioned from lobbying to sales, Lindsay kept Italy close by with trips to Goose the Market's cellar Enoteca and picnics along Indy's White River bike path. "Some snacks and a little vino--it's like being back in Italy," she remembers. 

Those food memories are part of what inspired Lindsay to join the Goose Gang. It's about flavor but the story only starts there. Working with small family farms who raise their animals as nature intended means Smoking Goose's recipes start with sustainability and responsibility. We agree with Lindsay: those are ingredients are in extremely good taste.

So what's in the picnic basket on the back of her bike? "Definitely Mortadella," Lindsay shares. "It's the Smoking Goose product that surprised me the most. It's simple but complex at the same time. That Cinnamon...it's not sweet but still adds a sweet profile," she muses. And after a long ride, Guanciale is what she craves...especially as a topping on the new pizza flatbreads of Oca's menu.

As part of her work with our distribution partners, she'll be hitting the road in 2018 for some countrywide visits. Help us welcome Lindsay!

Introducing Emily

This Long Island gal misses open water here in land-locked Indianapolis, but it's the Hoosier spirit (and some delicious meals) that ultimately beats the Big Apple to keep her here.

As a kiddo in New York, Emily's parents brought her along for reservations at Manhattan restaurants. "I remember towering charcuterie stands at the old-school French places, and we'd always get duck with plum then crepes for dessert," she says about the early days that inspired her interest in good food. 

The journalism school at Indiana University first tempted her away from New York, and after graduation, she stayed in Bloomington. "I met people that I loved here," Emily says, and Indiana's blossoming food scene only sweetened the deal. When she's out to eat, steamed mussels with chorizo catch her attention while at home in the kitchen, the folks Emily loves are also lucky to tuck into her seared pork chops with mushrooms, wine, and shallots. "I pat the pork chops dry -- it's the key to getting that delicious sear."

Emily says she did a happy dance the first time she tasted Smoking Goose's Duck Prosciutto, and chances are good that was no simple two-step. Performing on stage in her free time has earned Emily the associate producer position for a local troop. "There's nothing like the sound of applause," she muses.

The stage and the kitchen may vie for her free time, but her work time spans years with both independent groceries and large-scale specialty food merchants. Emily brings an insider's perspective as she works with Smoking Goose's grocery partners. Ask her for more secets to searing those perfect pork chops and help us welcome Emily to the Goose Gang!

The same road that took her to Africa, Nepal, and Thailand also brought her to Smoking Goose. Help us welcome Jourdan!

With a degree in photojournalism, Jourdan let her lens lead the way to overseas coffee farms, wildlife preserves, and more. "Believing in the mission of an organization is important to me," she says. Using her artistic talents to help share the stories of these far away organizations made her travels picture perfect.

After returning to Indiana, she followed the path of another passion which took her behind counters and into kitchens. Jourdan remembers it was her grandmother who helped inspire her interest in good food. "She's a great cook, and she's the one who made family meals important." Jourdan remembers marinated pork tenderloin hot off the grill and always leaving room for a slice of her grandmother's famous lemon tart with homemade whipped cream. These meals brought people together, and Jourdan built on those memories as she started working with several local food producers to help connect with their customers.

Here at Smoking Goose, Jourdan works directly with wholesale partners and navigates orders through our inventory management system. "I love working for a local, independent business with a mission I believe in, "she says. "And I can even bike to work."

We asked Jourdan which Smoking Goose meat treat she might bring for the family to nibble while those pork tenderloins are on the grill. Coppa and 'Nduja are in the running, but Dodge City Salame might snag the top spot. "It might look deceptively simple, but the fennel pollen is a surprise -- it's so good," she says while she's deciding. 

Sounds like future family dinners are prime time for more "product research," and we couldn't agree more. Welcome, Jourdan!

introducing Mike

There's a new gent on the meat beat. Help us welcome Mike!

This native Hoosier joins our sales team as Wholesale Distribution Coordinator after seven years selling organic, grass-fed cheese and milk. "It was important to me to continue working with a food producer who encourages and supports healthy, sustainable farming, and who produces a quality product," Mike says. "The care that goes into Smoking Goose products from start to finish is what makes me proud to be a part of the Smoking Goose team."

When he's not working with our partners in protein, Mike's tempo still stays quick. He plays percussion and beats out four gigs a week at Indy music venues and private events. "I play many different styles of music and enjoy the variety. Just like food, I don't want the same diet all the time," Mike explains. 

But if he had to pick a few Smoking Goose meat treats that get the most play on his plate, our Applewood Smoked Bacon takes top billing. "Because it's bacon," Mike says with a wink. To round out a glass of wine and some of the grass-fed cheeses he knows so well, Mike reaches for our Gentile Giant and Saucisson Rouge. "Gentile Giant is so unique and only available this time of year: wild boar with rum wort from Hotel Tango. I love the flavor and texture of Saucisson Rouge."

Duties include knife work by hand using traditional seam butchery techniques (breaking down whole proteins into subprimals, trimming boneless subprimals, and cutting trim) as well as executing the daily responsibilities of curing, brining, and overhauling products.

Smoking Goose seeks a self-motivated individual with a great passion for food and the desire to work closely with our team. The ideal candidate will have an understanding of specialty food distributors, how they operate, and how best to provide support to foster these partnerships. Because Smoking Goose values relationships with our distributor partners, their representatives, and customers, the ideal candidate is expected to develop interpersonal relationships as the key to building upon our success. The right candidate must be willing to travel and participate in a variety of food shows, product demonstrations, events, and other types of product training.  Success in this position will be measured based on account profitably maintained and grown within these distributor partnerships. This candidate will also be held accountable for attendance at required events and the new accounts that are secured as a result of connections made during those events.

General Responsibilities

  • Weekly purchasing of raw materials, production supplies, and cleaning supplies
  • Comparing price, quality, and service for best option
  • Completing of physical inventories (monthly)
  • Submitting purchase orders for approval
  • Placing orders with suppliers
  • Monitoring the receipt of raw materials, production supplies, and cleaning supplies
  • Monitoring HACCP documentation and tracking of products
  • Purchasing within set budgets
  • Inspecting product for accuracy and for quality
  • Comparing delivery invoices to purchase orders for accuracy
  • Working closely with production manager to maintain proper par levels of products and supplies
  • Working closely with book keeper to maintain cash flow budget

Food Safety Responsibilities

  • Upholds high quality, wholesomeness, and freshness of product
  • Oversees and monitors the rotation and stocking of product as it’s received
  • Upholds the company's food safety program
  • Adheres to all of Goose's standard operating proceducres (SOP) including sanitation (SSOP)
  • Adheres to all of Goose's good manufacturing practices (GMP)
  • Oversees maintenance and regular cleaning of all raw product storage areas

Product Responsibilities

  • Oversees and manages the labeling, rotation, and storage of product
  • Inspects incoming and stored products for shelf life, quality, and wholesomeness
  • Monitors shipping conditions and temperatures
  • Understands and works accordance with Goose's HACCP plan

Procurement Responsibilities

  • Researches and evaluates new suppliers
  • Works with farms to continually improve farming practices
  • Issues and follows up on newly submitted Producer Information Forms
  • Conducts farm visits to verify Producer Information Form data
  • Evaluates farms and producers based on Goose's purchasing principles (for more info, please visit http://www.smokinggoose.com/s/SGSources.pdf)
  • Works with processors to schedule slaughtering and provides cutting instructions
  • Evaluates processors in preferred networks for cleanliness and humane treatment
  • Trains processors in cutting instructions
  • Acquires Letters of Guarantee from new suppliers

  • This hourly, full-time position averages 42-50 hours per week, typically 5 days a week and 9-10 hours per day.
